The Road to Morocco … Chicken With Lentils

I’m back to work now – I work from home – so I haven’t updated as often as I would have liked to. And it doesn’t help that I pressed the wrong update button on my website the other day and wiped out all my pictures and text ☹ But being the IT genius that I am – and googling a couple hundred fix it sites – I managed to get back up 😊 We were still in self–isolation last week - but we are out now, yay!! – but I’m still staying in as long as I can, it’s scary out there in the world – so we had to raid the pantry again for a few meals. Kelly made a great Curried Beef with Rice and Parathas (the recipe is secret so I can’t tell you ) and a great pasta dish with leftover turkey, a can of mushroom soup, half a red pepper, and some stray celery (how we got two bunches of celery I’ll never know, but we’ve been using it in every meal lately). I went to make some chicken cordon bleu – but didn’t have any prosciutto, swiss cheese, cordon, or any bleu ☹ But I did have the chicken, a package of dry red lentils, a red onion, bouillon, lemon juice and left over green and red peppers – and of course a whole wack of spices; cumin, basil, coriander. So what does that make? Moroccan Chicken With Lentils – turned out pretty good – and with lots of fibre. Another three quick suppers for self-isolation 😊 I think we are having left over Swedish meatballs tonight – the problem with cooking for three (Kelly, Zeke, and myself) is that we always end up cooking more than we need and end up with leftovers – but really, really tasty leftovers. The pic on the left is Zeke the Dog snoozing after supper. And I think tomorrow is steak and baked potato with chives night – okay, not leftovers, but it’s always nice to have a good steak. I caught up on some great Netflix Global series – finished ‘Ultraviolet’ (Polish) – started and finished ‘The Valhalla Murders’ (Icelandic) , slow to start but a really excellent police crime drama – started and finished ‘The Mire’ (Polish), a short gloomy police / journalist drama set in the early ‘80’s in Poland, very, very good and the last couple of days binge watched ‘Money Heist – Season 4’!! What a series – it’s hard enough to keep your audience rivetted through 3 seasons (but they certainly did), but season 4 is a blockbuster with one heck of an ending (Season 5 maybe??). It’s the most watched Spanish (and foreign as well) series ever aired on Netflix. My mind is a little dizzy from watching shows from Polish to Icelandic to Polish to Spanish in one week, but hey, it's a lot of fun learning about other countries and their people. I went digging through the store room the other day and found about 20 albums of pictures that never made it to digital – Poland, Nova Scotia, some early cruises, etc. – that I’m going to start scanning so that I can use in some travel stories … but that’s a lot of scanning so it might be a while until they are posted … Have a great and safe week … we’ll see you in a bit!!
