“Pineapples don’t grow on trees, you know …”

I always thought they did – and so did Kelly. But one day, at band camp … actually one day on an excursion to Gatun Lake in Panama … the tour guide says …”To your left you will see one of our many pineapple plantations …” and of course Kelly and I ask … “But where are the pineapple trees?”. Dead … silence … throughout … the bus. Apparently they grow in the ground and only have two fruits from each seed. This is why people go on excursions, to learn by looking silly. Anyways, one of my favorite all time go to recipes is ‘Chicken Stuffed Pineapple’ . It’s from a book I bought about 36 years ago … ‘Wok With Yan’  (Martin Yan – used to have a tv cooking show) and still have … held together by two elastic bands.  As with all recipes that I try out … I go, yes, yes, yes, makes sense, sounds good … and then close the book and go free form. But the basic idea is to marinate some chicken, stir-fry with chopped fresh pineapple and bake the mixture in hollowed out pineapple shells. But let’s use pork instead of chicken, brown sugar instead of white, ginger and garlic for extra flavouring. So a couple of changes, but man, is it ever tasty. And quick … slice and marinate the pork ( or chicken), slice the pineapple in halve and scoop out the flesh (takes me about 3 minutes), stir fry for about 5 minutes and in the oven for about 15.  And I had help from Zeke the Dog. Give it a try … I’m sure you will like it 😊
