Top Sirloin Roast with Rub

Ingredients
2 tbsp. Minced Garlic (bottled if you have it)
1 tsp. Dried Thyme
1 tsp. Dried Rosemary
2 tbsp. Dijon Mustard
1 tsp. Salt
½ tsp. Black Pepper
1tbsp. Extra Virgin Olive Oil (EVO)
1 2 lb. Beef Top Sirloin Roast
3 Medium Sized Potatoes (quartered)
2 Medium Sized Yellow Onions (quartered)
2 Medium Carrot (cut into 1-inch long pieces)
2 tbsps. EVO
1 tsp. Thyme
Black Pepper
Salt

Preparation
• Preheat the oven to 360 degrees
• Mix together first 7 ingredients together into a paste
• Cover the beef roast all over with the paste
• Place the beef roast into a large roasting pan on a grid fat side down
• Place the roasting pan (uncovered) into the oven
• Reduce the heat to 350 and roast for about 35 minutes
• Put the vegetables into a large bowl and toss with the EVO, Thyme, Pepper, and Salt
• Arrange the potatoes, carrots, and onions around the beef roast in the roasting pan
• Roast in the oven at 350 degrees for about another 35 minutes
• Let the roast rest for about 15 minutes prior to slicing and serving on a plate
• Arrange the roasted vegetables around the sliced roast
