Ingredients
2 tbsp. Minced Garlic (bottled if you have it)
1 tsp. Dried Thyme
1 tsp. Dried Rosemary
2 tbsp. Dijon Mustard
1 tsp. Salt
½ tsp. Black Pepper
1tbsp. Extra Virgin Olive Oil (EVO)
1 2 lb. Pork Loin Roast
3 Medium Sized Potatoes (quartered)
2 Medium Sized Yellow Onions (quartered)
1 Large Carrot (cut into 1-inch long pieces)
2 tbsps. EVO
1 tsp. Thyme
Black Pepper
Salt
Preparation
· Preheat the oven to 410 degrees
· Mix together first 7 ingredients together into a paste
· Cover the pork loin all over with the paste
· Place the pork loin into a large roasting pan on a grid
· Place the roasting pan (uncovered) into the oven
· Reduce the heat to 350 and roast for about 35 minutes
· Put the vegetables into a large bowl and toss with the EVO, Thyme, Pepper, and Salt
· Arrange the potatoes, carrots, and onions around the pork loin in the roasting pan
· Roast in the oven at 350 degrees for about another 45 minutes
· Let the roast rest for about 15 minutes prior to slicing and serving
