


Ingredients
1 lb Ground Pork
1 14 oz. Can Lima Beans
1 10 oz. Can Whole Mushrooms
1 Medium Onion (rough chopped)
2 tbsp. Vegetable Oil
½ tsp. Chili Oil (Sesame if you have it)
1 tsp. Dried Oregano Flakes
1 tsp. Dried Basil Flakes
3 tbsp. Passata (spiced strained tomatoes)
Salt and Pepper
1 Slice Bread (optional)
(torn into small pieces – preferably light rye or whole wheat)
2 oz. Breadcrumbs
Grated Dry Parmesan
2 oz. Shredded Cheese (preferably Cheddar – optional)
Preparation
· Preheat Oven to 350 degrees
· Heat vegetable oil in skillet
· Add ground pork and onions
· Stir until lightly browned – drain oil
· Add chili oil, basil, and oregano – stir 1 minute
· Add canned mushrooms and lima beans with liquid
· Add passata (optional)
· Add salt and pepper to taste
· Stir and let simmer for about 4 minutes
· Add contents of skillet to casserole dish
· Sprinkle top with bread, breadcrumbs, and cheese
· Bake in the oven covered for 20 minutes
· Bake uncovered for an additional 10 minutes
· Let cool, slice into squares, and serve
