So the other day I had to do an alternate version of Shepheard’s Pie as I was missing some key ingredients in the pantry. So for the next meal I thought, well – I have a defrosted pork tenderloin and some medium sized shrimp, and … for something different … a package of rice noodles. So the first thing that springs to mind is Singapore Rice Noodles. Great! Tasty, filling and easy to make. If you have all the right ingredients. So I cut up the pork into thin strips, clean the shrimp and toss in a little lemon juice, boil some water and pour over the noodles to soften them up. Then I go to gather up the other ingredients. Crap … no bean sprouts, no green onion, and no oyster sauce ☹ But I do have eggs, hoisin sauce, and lots of red onions – so a little substitution here, a little there … and voila … something that kind of resembles Singapore Noodles and does taste great … so another alternate success!!
