Beef Birria - a thick, succulent stew - dry marinated over night with cinnamon, cloves, and other spices - done in a mole sauce made with guajillo and pasilla chile peppers. Serve with rice or in tortillas as tacos.

Mexican style green bell peppers stuffed with ground pork, beans, rice, corn, roasted tomatoes, cheese, and spices. For more heat and a little more flavour can be done with poblano peppers instead.
One of my favorite activities is smoking food. Nothing like firing up the smoker (I have a Weber Smoky Mountain) and infusing your favorite cuts of meat with that rich smoky flavor.
Shredded smoked pork burritos. Pulled smoked pork reheated in an enchilada sauce and rolled in a flour tortilla with cheese, onions, and lettuce. Soooo Gooddd!! 🙂
Mexican Chicken Enchilada Casserole
Chicken cooked in a spicy home made Enchilada Sauce, then shredded and layered in a casserole with the sauce, tortillas, cheese, and corn. You can substitute prepared canned Enchilada Sauce but I find the home made to be tastier. Very easy and quick to make for a tasty supper meal. Serve by itself, or with Mexican rice, or with a light green salad
