Mexican Pork Tortilla and Guacamole Salsa

Fish Tortillas
These are really Fish Tacos - but as I prefer to use soft tortillas ... Chunks of white fish fillet marinated with Mexican spices, rolled up in a creamy sauce and shredded cheese. I first came across these in Newport Beach, California in a Mexican restaurant ...

Guacamole Salsa
Not a traditional creamy guacamole as the vegetables are rough cut ... nice and tangy with a hint of jalapeno ... it makes for a great side dish

Pork Tortillas

Strips of onion, green pepper and pork tenderloin marinated with cumin, coriander, and lime juice -rolled in a tortilla and covered with cheese and salsa. Quick to make, delicious to eat ... serve with some salsa on the side

Mexican style green bell peppers stuffed with ground pork, beans, rice, corn, roasted tomatoes, cheese, and spices. For more heat and a little more flavour can be done with  poblano peppers instead.

Smoked Pork Burrito

Smoked Pork Burritos

One of my favorite activities is smoking food. Nothing like firing up the smoker (I have a Weber Smoky Mountain) and infusing your favorite cuts of meat with that rich smoky flavor.

Shredded smoked pork burritos. Pulled smoked pork reheated in an enchilada sauce and rolled in a flour tortilla with cheese, onions, and lettuce. Soooo Gooddd!! 🙂

chicken enchilada casserole 2

Mexican Chicken Enchilada Casserole

Chicken cooked in a spicy home made Enchilada Sauce, then shredded and layered in a casserole with the sauce, tortillas, cheese, and corn. You can substitute prepared canned Enchilada Sauce but I find the home made to be tastier. Very easy and quick to make for a tasty supper meal. Serve by itself, or with Mexican rice, or with a light green salad

Baked Tamale Casserole With Masa

Tamale Casserole With Masa

A mexican casserole made with a corn bread topping rather than the tradional tamale husks. A layer of corn bread topped with a spicy mixture of pork, black beans, peppers, and onions and finished with cheese, corn bread, and more cheese. Baked to a golden brown and served with salsa and sour cream
