Every now and again you need to take a break from cooking … and make something fast, easy, and satisfying. Like a burger … grilled on a BBQ … and loaded with cheese. Luckily I have an extra full tank of propane so we can BBQ as much as we want. And Zeke the Dog really, really appreciates it … because he gets his own burger … without the bun … with lots of cheese. Kelly makes the best burgers … a nice mix of ground beef and ground pork … I heat up the BBQ until it’s sizzling hot … put the patties on the grill and …..ssssssssszzz … the sound, the smell …. Ahhh, nothing quite like it. (Except for when I’m using the smoker to make chicken and ribs 😊 ) Sear one side …. Flip, sear the other side, flip …. Add two slices of cheese – one Monterey Jack, one cheddar – let it melt on top … and there you are … ready to put on a grilled flat bun with all the fixings. Onions, tomatoes, corn relish, mustard and ketchup – any combination you want – and serve with fries. And Zeke gets his on his own plate – but without the bun. That was yesterday – today, I’m back to work, so even less time to prepare supper. But I did – Egg Pie – or commonly known as Quiche. It only takes me less than 10 minutes to make the pastry dough from scratch … roll out and fit in a pie plate … put some beans in to keep the shape …. And 15 minutes in the oven to pre-bake the pastry shell. 5 minutes to fry up some bacon pieces … let cool … and mix in the pie filling with cheddar cheese, sour cream, 5 eggs, onions, mushrooms, and red peppers – takes 10 minutes tops … pop in the oven for 45 minutes at 350 to cook and set … and voila 2 quiches / quichees 1 for supper and 1 for leftovers with a salad. Another two quick suppers for self-isolation 😊 Note: the pictures for Quiche are old ones as I haven't finished baking tonight's 🙂
