Haddock Fillets For Tacos Marinating
Fish Taco Preparation
Fish Taco and Guacamole Salsa

Ingredients

1 tsp. Cumin

1 tsp. Ground Coriander

1 tsp. Chile Powder

1 tsp. Paprika (Smoked if you have it)

½ tsp. Black Pepper

½ tsp. Salt

1 lb Fillet of Fish (Cod or Haddock)

4 Small (6 in.) or 2 Large (10 in.) Flour Tortillas

1 tbsp. Lime Juice

2 tbsp. Vegetable Oil

2 tbsp. Mayonnaise

2 tbsp. Sour Cream

1 tbsp. Chopped Fresh Coriander (optional)

2 oz. Shredded Cheese (Cheddar or Mexican Mix)

Preparation

·         Combine first 6 ingredients together as taco seasoning

·         Add ½ taco seasoning to a large bowl

·         Add vegetable oil and lime juice to the large bowl

·         Chop the fish fillet into large pieces and add to the large bowl

·         Mix ingredients of the large bowl well

·         Add remaining taco seasoning to a small bowl

·         Add mayonnaise, sour cream and coriander to the small bowl

·         Mix ingredients of the small bowl well as taco sauce

·         Add the fish mixture to a hot skillet and stir for about 3 minutes

·         Heat the tortillas in a microwave for about 22 seconds

·         Spread some taco sauce over the tortilla

·         Add some of the fish mixture on top of the sauce

·         Add some shredded cheese on top

·         Roll up the tortilla and place on plate

·         Repeat for remaining tortillas

·         Top with salsa, sour cream, remaining cheese and fish mixture

Serve with Guacamole Salsa  (if desired)
