Last week was a bit strange weather-wise – went from super hot one day to freezing cold the next. The past week was a mixture of left-overs, BBQ, and smoking … last Sunday had Paella with chicken, shrimp, and sausage ; Monday, I can’t remember – don’t’ know why I never remember Mondays; Tuesday BBQ’d burgers and fries; Wednesday, Montreal Smoked Meat sandwich with Swiss cheese; Thursday, smoked chicken salad with cheese and spinach; Friday, left over Lamb Kheema with toasted rye bread; Saturday, steak and baked potatoes; and last night I made Rigatoni with ground lamb and tomato sauce. Let’s go back to Tuesday – I smoked all afternoon to make Wednesday’s supper😊 7 pounds of beef brisket had been dry brined for 6 days; rinsed off and water bathed for 6 hours (it’s to leech out the salt from the brining); rubbed with my secret spice mix and set aside for 2 hours; smoked for 6 hours in the Weber Smokey Mountain; and steamed for another 2 hours in a roasting pan; then one half shredded for tacos and stuff – and the other half sliced for sandwiches – mmm, mmm, good!! 😊 I will smoke the other 5 pounds of the brisket next week. I’m still watching Netflix Global series; one in Spanish, one in Danish (that can really screw your head up) – finished Season 1 of ‘Unauthorized Living’ – Season 2 is even better; finished Seasons 1, 2, and 3 of ‘Rita’ – excellent comedy drama – 2 more shows and I’m done Season 4 – but will have to wait until September for Season 5. Kelly and I tried to watch about 3 new series on Netflix – “Bitter Daisies”, “Deep Water”, and “White Lines” – they only lasted 1 show until we got bored with them ☹. On the other hand we started watching “The Kominsky Method” with Michael Douglas and Alan Arkin – very, very funny and very well done 😊. On Saturday we did another road trip through Southern Ontario – now in phase 2 of lifting COVID restrictions so some of the beaches were reopened – drove by Belmont – where a tornado had touched down days earlier; went to a Mexican grocery story in Aylmer – great selection of food and spices; drove through Straffordville, Vienna, Port Burwell, and Copenhagen before taking a road break in Port Bruce – nice to see people fishing off the pier; and then on to Port Stanley before coming back home – a 3 ½ hour drive on a beautiful day. We might try west of St. Thomas – Port Glasgow, Blenheim, etc. next week. Until then, have a great and safe week … we will see you in a bit!!
