Ingredients
3 Large Bratwurst (about 1 pound)
3 Slices Bacon (cut into 1 “ pieces)
1 tbsp. olive oil
2 Medium Potatoes (white or yellow – diced in 1 “ cubes)
4 oz. Sauerkraut ( drained)
1 tbsp. Caraway Seeds
1 tsp. Smoked Paprika
2 oz. Apple Cider Vinegar
2 tbsp. Brown Sugar
1 Medium Onion (diced)
1 tbsp. Fresh Minced Garlic
2 oz. Cheddar Cheese ( shredded)
Salt and Pepper (to taste)
Preparation
- Preheat oven to 280 degrees
- Heat olive oil in a skillet and brown the bacon pieces
- Remove the bacon and brown the bratwurst in the skillet
- Remove the bratwurst, let cool, and cut into 1.5 “ pieces
- In a large bowl – mix the remaining ingredients (with the exception of the cheese) and let sit for about 5 minutes
- Mix in the bacon and bratwurst pieces
- Place the mixture inn a medium casserole
- Bake for about 30 minutes (until potatoes are softened) covered
- Remove the casserole from the oven and uncover
- Sprinkle the Cheddar Cheese over the top of the casserole
- Replace in the oven and bake (uncovered) for about 10 more minutes at 280 degrees
- Serve on a plate with buttered, toasted rye bread (optional)
