Chinese Pork and Tofu With Hoisin

Ingredients

1 Block of Firm Tofu
2 tbsp. Vegetable Oil
10 oz. Ground Pork
1 Medium Onion (sliced in thin strips)
1 tbsp. Gingerroot (minced)
2 tbsp. Fresh Garlic (minced)
1 tsp. Chili Flakes
½ tsp. Black Pepper
1/2 Red Bell Pepper (seeded and chopped
2 Stalks Green Onion (cut into ½” pieces)
2 tbsp. Oyster Sauce (or Hoisin Sauce)
1 tsp. Chili Oil
2 oz. Bouillon
2 Fresh Eggs
Salt to Taste

 

Preparation

For Tofu:
• If in a package – make slits along sides of package – let drain
• To make tofu cubes
o Make 2 horizontal slits along length of tofu block
o Make about 4 slits lengthwise across top of block
o Make about 6 slits across the width of the block
• Drain and set aside

For Pork and Tofu Stir Fry:

• Heat the vegetable oil in a skillet until hot
• Add the onions – stir until slightly browned and soft
• Add the ginger and garlic – stir for about 20 seconds
• Add the ground pork – break up and stir until browned
• Add the chili flakes and black pepper
• Add the bell pepper strips and green onion - stir for about a minute
• Add the tofu cubes and stir for about a minute
• Add the oyster sauce and chili oil – stir for about a minute
• Sprinkle with bouillon or water if too dry
• Break open the eggs over the stir-fry mixture – stir in until slightly scrambled
• Turn the heat off – leave the stir-fry mixture in the skillet until ready to serve
• Serve in a bowl
